Smoothies for Breakfast!

Last week, the majority of my diet consisted of Easter candy. I decided this week it was time for a change. The winter left me in a bit of a rut, but I’ve been working my way out of it. I’ve been exercising in the morning recently and I’m really enjoying it. The only thing that has been leaving me perplexed is what to eat before I exercise. My normal breakfast is two scrambled eggs, a piece of toast, and my coffee. That isn’t the best thing to put in the stomach prior to hitting the gym.

In comes the smoothie! I’ve been meaning to have more green drinks and the like, so this coincides perfectly. I’ve decided I’m going to have a morning smoothie prior to my workouts. It’s quick, has some quality calories in it, and it won’t weigh me down. For now, I’m using other as inspiration but I’m thinking I’ll eventually branch out.

Today I tried a Chocolate Mint Smoothie recipe I found here. I changed the recipe slightly to my tastes. I don’t like eating my smoothies with a spoon and getting a cold headache. I used a cup of unsweetened vanilla almond milk, instead of her 1/4. My banana was not frozen and neither was my spinach. This was my final list of ingredients:

  1. 1 cup unsweetened vanilla almond milk
  2. 1 scoop Arbonne chocolate protein powder (Vegan)
  3. 1 T ground flaxseed
  4.  1 loosely packed cup of fresh spinach
  5. 1/4 t peppermint extract
  6. 1 small ripe banana

I blended that all and served right away. The verdict – I like it! The peppermint extract is a really nice touch. I’ll make this one again, for sure! Nutritional breakdown below:

254 Calories, 37 g carbs, 5 grams fat, 15 grams protein, 17 g sugar
